Acetala Al parol born from Valerio's passion for Traditional Balsamic Vinegar (ABTM), which started about 37 years ago.
At that time, Valerio used to work in Modena and a co-worker convinced him to try this product. He immediately fell in love with it and decided to give start to its own production.
He started so to buy the first barrels and year by year he now has roughly 200 barrels.
As time went by, he tried to learn the skills of tasting and smelling too. He attended courses and got certificates to evaluate others Traditional Balsarnic Vinegar of Modena.
Today, Valerio is also a member of the jury for the bottling of ABTM.
